I had a couple zucchinis go rouge and I can now anchor a battleship with them. It’s time to bust out the zucchini bread recipe!
Chocolate Chip Zucchini Bread
INGREDIENTS
- 3 eggs
- 2 c white sugar
- 1 c vegetable oil
- 2 c grated zucchini
- 2 tsp vanilla
- 3 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
- 3 c all purpose flour
- 3/4 c chocolate chips (milk chocolate or semi-sweet or whatever floats your boat)
DIRECTIONS
Preheat oven to 325F. Grease two 9×5 inch loaf pans.
Beat eggs until light and frothy. Add sugar and vegetable oil; mix well. Stir in zucchini and vanilla. Add cinnamon, salt, baking soda and baking powder; mix well. Toss the chocolate chips into the flour and add one cup at a time into wet mixture until well incorporated.
Bake 60-70 minutes (or 25-30 minutes for muffins) or until toothpick inserted in middle comes out clean. Remove loaves from pan and let cool.
